Creamy Cajun Potato Soup
A rich, comforting potato soup with a little Cajun kick, made from simple pantry ingredients and topped with all the best finishes.
Ingredients
2 tablespoons bacon grease
1 medium yellow onion, diced
3 cloves garlic, minced
2 pounds gold potatoes, diced into bite-sized pieces
1 teaspoon Tony’s Cajun seasoning (more to taste)
1 teaspoon dried thyme
4 cups chicken stock
2 cups 2% milk
Salt and pepper to taste
Toppings
Chopped green onions
Shredded cheese
Bacon bits
Instructions
Sauté the aromatics
In a large pot or Dutch oven, heat the bacon grease over medium heat. Add diced onion and cook until softened, about 5 minutes. Stir in garlic and cook for 30 seconds.
Season and simmer
Add diced potatoes, Tony’s Cajun seasoning, thyme, and chicken stock. Stir well. Bring to a boil, then reduce heat and simmer uncovered for 15–20 minutes, until potatoes are fork tender.
Make it creamy
Use a potato masher to lightly mash some of the potatoes directly in the pot for a thicker texture, leaving plenty of chunks.
Add milk
Stir in the milk and heat gently over low heat until warmed through. Do not boil after adding milk.
Taste and adjust
Add extra Cajun seasoning, salt, or pepper if needed.
Serve
Ladle into bowls and top generously with green onions, shredded cheese, and bacon bits.
Tip
For even more richness, stir in a handful of cheese directly into the soup before serving.
